2 (12-ounce) packages of your favorite Vine Ripe hummus
8-ounces 2% plain Greek yogurt
2 large cucumbers, chopped
¼ cup chopped fresh dill
1 large chopped tomato
1 teaspoon extra-virgin olive oil
2 tablespoons chopped fresh oregano
½ cup pesto
½ cup drained and chopped jarred roasted red and yellow peppers
½ cup feta cheese
¼ cup diced red onion
¼ cup sliced black olives
Salt and pepper, to taste
Whole-grain pita wedges or pita chips and raw veggies, for serving
In a deep, medium serving bowl, spread one container of hummus in an even layer. Set aside. In a small bowl, combine, Greek yogurt, 1 ½ of the chopped cucumbers, dill, and salt and pepper to taste. Spread yogurt mixture over hummus layer in serving bowl. Set aside. In a small bowl, combine chopped tomato, olive oil, oregano, and salt and pepper, to taste. Spread tomato mixture over the Greek yogurt layer in the serving bowl. Top the tomato layer with the other container of hummus and smooth into an even layer. Top second hummus layer with the pesto and spread into a thin layer. Top with peppers, feta cheese, onion, and olives. Serve with whole grain pita wedges or chips and raw veggies for dipping. Enjoy!
